Ingredients
4 peeled diced Potatoes
6 tablespoons Vegetable Oil
1 1/2 tablespoons Lemon Juice
1 teaspoon Ground Carraway Seeds
1 1/4 teaspoons Salt
6 tablespoons Cayenne Pepper
3 tablespoons Ground Cumin
1 1/2 teaspoons Salt
Last three ingredients mixed with 2 1/2 teaspoons Water and called Brisa
Method
Boil potatoes in salted water until tender but still intact.
Drain off water and let spuds dry out.
Warm oil in heavy frying pan over moderate heat.
Add lemon juice, Brisa, carraway and salt and stir until liquid has evaporated.
Take off heat.
Add potatoes and turn gently.
Taste for seasoning.
