Ingredients
20 oz tin Tomato Juice unsweetened
2 dessertspoons Gelatine or 4 Oetker Gelatine Sheets
1 small Onion finely cut
1/4 cup Celery finely cut
1 tablespoon Lemon Juice
Cloves
Bay Leaf
6 Peppercorns
1 small teaspoon Sugar
Salt And Pepper
Method
Bring to the boil with a little salt, the tomato juice, lemon juice, cloves, bay leaf and peppercorns. Simmer 5 minutes. Wet sheets of gelatine in cold water and squeeze out excess water then pour over the hot liquid to dissolve the gelatine (do this gradually). Taste and add salt, sugar and pepper as needed, Worcestershire sauce also if to your taste.
Chopped mint may also be used.
When cold, fold in onion and celery and pour into wet mould.
