Ingredients
2 lbs Pumpkin
1 large can Evaporated Milk
6 oz shredded processed Cheese
2 tablespoons Parmesan Cheese
1/2 teaspoon Salt
1/2 teaspoon dried Mustard
2 hard-boiled Eggs
Method
Cook pumpkin in boiling salted water until just tender. Drain and mash. Heat evaporated milk in double saucepan until almost boiling. Remove from heat. Add cheeses and stir until melted. Add seasonings.
Arrange alternate layers of mashed pumpkin and egg slices, covering each with sauce. Repeat until all ingredients are used, finish with a topping of sauce. Cook in a moderate oven for 15 minutes.
