Bean Sprout Salad

Preamble
Bean sprouts can be kept in a jar with water in fridge for about 2 weeks. Then drain very well.

Ingredients
1 lb Bean Sprouts
1 teaspoon chopped Chives
2 oz canned Pimento
1 pickled Cucumber
Dressing
2 teaspoons Olive Oil
1 teaspoon Wine Vinegar
1/2 teaspoon Mustard
2 teaspoons Soy Sauce
1/2 teaspoon Sugar and Salt

Method

Chop the pimento and pickled cucumber. Mix with the bean sprouts and chives.

Mix the dressing ingredients making sure the sugar dissolves.

Toss the salad ingredients with the dressing
