Ingredients
2 lb lean Beef
1 lb fresh Pork
1 Spanish Onion finely chopped
4 cloves Garlic chopped
2 tablespoons Bacon Fat
1 pint good Beef Stock
4 tablespoons Chilli Powder
1 tablespoon Flour
2 Bay Leaves
1/2 teaspoon powdered Cumin
1/2 teaspoon Oregano
Salt
Freshly ground Black Pepper
Boiled Kidney Beans
Rice
Method
Cut beef and pork into bite-size cubes, trimming fat as you go. Brown meat, chopped onion and chopped garlic in bacon fat in a thick-bottomed, flame-proof casserole.
Cover meat with boiling beef stock; bring again to the boil; cover casserole and simmer gently for about 1 hour.
Blend chilli powder with flour in a little of the hot pan juices and add to the casserole at the same time as the bay leaves, cumin, oregano and freshly ground black pepper and salt, to taste.
Simmer over low heat until meat is tender. Check seasonings and serve with boiled kidney beans and rice.
