Ingredients
Brains (Offal)
Salt And Pepper
Vinegar
Capers
Parsley
Butter
Method
First blanch the brains or cook carefully in the butter as it blackens. Drain. Slice. Season with salt and pepper. Lightly sprinkle with vinegar. Add a few capers and a little chopped parsley, whilst keeping the brains warm.
Separately heat butter until it becomes 'black' in fry pan. Don't go too far into the black. If butter smokes overmuch too many little black specks appear. Result is not good. When you have butter sombre and sizzling pour over brains and serve.
