Ingredients
Onions
Butter
Sugar
Flour
Milk
Cream
Lamb Cutlets
Black Pepper
Breadcrumbs

Method

Peel, slice and boil onions in a little water for 10 minutes.

Drain and reserve liquor.

Melt butter in saucepan and fry onions with sugar till quite soft - stir in flour and let cook a minute - add warm onion stock and mix well, then warm milk and finally cream. Season well.

Trim and dust lamb cutlets with black pepper and grill them well on one side only. Put them cooked side down in a baking tin and cover with onion sauce. Sprinkle a few breadcrumbs over and put a knob of butter on each cutlet. Put in a hot oven for 15-20 minutes and until top is lightly browned.
