Preamble
"William Kitchiner, 1817. This is excellent served with lightly boiled cabbage, well drained and pressed and then lightly tossed in butter with a touch of garlic."
Ingredients
2 oz (4 tablespoons) Beef Dripping
5 oz (1 cup) Flour
2 Eggs
1/2 pint (1 cup) Milk
1 lb Beef cut into small pieces
Method
Pour the dripping into a roasting pan. Mix the flour, eggs and milk and beat with a rotary whisk. Season. Put a quarter of this batter into the roasting pan and cook in the oven at 400 degrees (Mark 6) until it is lightly set. Lay the well seasoned strips of beef on top of the batter in the pan and cover with the rest of the batter. Bake for 45-50 minutes or until golden. It should be crisp, brown and puffy, like Yorkshire pudding. Cut into wedges and serve.
