Preamble
"Some butchers, and good grocers such as Sainsbury's, sell a joint of beef which has been so lightly salted that it needs no soaking. It can be turned into the most delicious spiced beef with very little trouble. An ideal summer dish."
Ingredients
2 lb piece of Salt Beef
2 heaped tablespoons Brown Sugar
1 rounded dessertspoon Juniper Berries crushed
1 rounded dessertspoon Peppercorns crushed
1 heaped teaspoon Allspice Berries crushed
Method
Mix up the spices and put half in the base of a deep dish. Place the beef on it and scatter the rest of the spice mixture thickly on top, rubbing and pressing it in. Cover the dish and leave for 3-7 days in the refrigerator. Scrape off the spices and sugar, and cook and press the beef as the recipe for Spiced Salt Beef.
The spices can be varied to your own taste. Sometimes I use ground cumin and coriander seeds instead of allspice berries.
