Ingredients for marinade
2 small finely chopped Onions
1 teaspoon Mixed Herbs
1 Bay Leaf
1/4 clove Garlic finely chopped
1 bottle Red Wine
Manning ingredients (main dish)
Sufficient Fillet Steak approx 1 1/4 lbs for 2 trimmed of fat and skin
1/2 lb sliced Mushrooms
2 crushed chicken Stock Cubes
2 tablespoons sweet Almond Meal
1 tablespoon Mixed Herbs
1 teaspoon Mace
Sauce
3/4 pint Marinade Mixture
1 cup Cream
Sauteed Mushrooms
Method
Blend marinade ingredients, (onions, herbs, bay leaf, garlic, red wine) marinate meat for 12 hours.
To prepare meat for cooking:
rub ground almond meal, crushed chicken cubes, mixed herbs and mace onto meat. Saute meat in open pan in butter until golden brown. Transfer to baking dish and finish cooking in oven for a few minutes.
Saute mushrooms in butter until cooked through, put aside.
To make sauce:
Add ingredients (marinade), reduce to half, add cream reduce again until thickened. Slice meat into medallions. Place on large oval plate, add sauteed mushrooms, top with sauce. Serve with potatoes in foil. Serves two.
