Method
Make that rich white sauce using corn flour, butter, cream and cognac.
Blanch sweetbreads in hot milk for 5 minutes. Drain. Combine with white sauce. Reheat. Then combine with any of the following delectables: truffles, lobster, chopped chicken, or tiny chicken quenelles if you can make them, butter-fried champignons or chopped turkey breast.
Put this mixture into a large, preheated puff pastry case, or individual cases.
Also I have made individual cream puff pastries which came from the oven about 4 inches wide and almost as high.
These were filled with a sweetbread mixture and I tend to prefer them to puff pastry.
