Veal Pie
Ingredients
4 oz Butter
6 oz plain Flour (1 1/2 cups)
4 oz mashed Potatoes (approx 1 large potato)
1 tablespoon cold Water
1 lb Veal
4 oz Bacon
1/2 Celery stick
2 Leeks
3 hard-boiled Eggs
3 Tomatoes large
3 oz grated Cheese (tasty)
Method
Rub butter in flour, add salt, mashed potato and cold water. Knead to a smooth dough and line a 2 inch deep overproof dish, reserving 1/3 of the dough for a cover.
Cut veal into thin strips, heat the chopped bacon until the fat is sufficient to cook veal, fry until the veal changes colour. Add the chopped celery, slices of leak, season with salt and pepper. Allow to cool.
Into a pie dish, put a layer of veal, then chopped hard-boiled eggs, tomato, cheese, until all ingredients are used.
Cover with remaining potato pastry, brush with milk and cook in a hot oven 400 deg. for 25 minutes.
