Ingredients
Mushrooms
Butter
Bacon
Sweetbreads
White Sauce
Cheddar Cheese
Method
Finely chop enough mushrooms to thickly cover your quantities of sweetbreads. Saute mushrooms in butter with a little finely chopped bacon.
Fry sweetbreads in butter. Remove, and place on heated, ovenproof dish.
Cover with mushrooms. Then with a white sauce made with cream as already described. On top of this a generous grating of mild, creamy, cheddar cheese.
Under griller briefly.
Serve with whipped potatoes and petit pois.
