Lamb Cutlets with Pickled Walnuts

Ingredients
8 Lamb Cutlets
8 pickled Walnuts
2 oz seasoned Flour
2 Eggs
2 cups dry Breadcrumbs
2 oz grated Parmesan Cheese

Method

Cut a pocket in the side of each lamb cutlet, put a pickled walnut into each one and press down to close the opening - secure with a toothpick until after the cooking time if necessary.

Coat the cutlet with seasoned flour, beaten egg and then the breadcrumbs and cheese. Cook in a little hot oil until golden brown. Serve with duchess pototoes and green peas.
