Ingredients
2 teaspoons Salt
1/2 teaspoon White Pepper
1/2 teaspoon Ground Ginger
1 lb peeled and sliced Apples
10 stoned Prunes
2 oz Butter
1 1/2 pints Brown Stock
1 oz Flour
Pork
Method
Trim pork and beat flat.
Sprinkle in salt and pepper, and ginger.
Lay apples and prunes on pork, roll and skewer.
Brown in butter, then add stock and cook 20 minutes till tender.
Take out of juice and make a sauce with the poaching liquor.
