Method
Sweetbreads for grilling must be pre-blanched as for other recipes. Drain. Sprinkle with salt and pepper.
Shake them in flour for a thin coating. Lightly brush with olive oil. Be ready with slices of smoked ham cut in 3 inch discs.
Place sweetbreads on ham. Then under moderately hot griller and not too close to heat. Turn sweetbreads but don't turn ham. Give about 5 minutes on each side.
Serve.
