Golden Apples

Ingredients
1 lb minced Pork (cooked)
1 teaspoon chopped Parsley and Sage
1 Egg
4 teaspoon Flour
1 teaspoon Olive Oil
1 Egg White
1/4 pint tepid Water

Method
Mix flour, salt, oil and water into a stiff paste. Beat well till quite smooth. Let stand before stirring in stiffly beaten egg white. Add sage and parsley to the pork, season, add beaten egg. Mix well. Shape into little balls no larger than a very small apple. Heat oil in pan, dip pork balls in batter and fry till golden. Roll 1/2 balls in chopped parsley and leave the others yellow. Mix the two when serving.
