Ingredients
1 Beef Fillet (about 2 lbs)
Mustard
Melted Butter
Salt And Pepper
2 oz Butter
2 tablespoons Flour
1 cup Milk
1 cup Cream
1/4 lb Mushrooms
Extra Butter
Lemon Juice
Method
Trim fillet, spread with a little mustard. Place in baking dish, season and pour over a lot of butter. Roast in a moderate/hot oven 15 minutes, reduce heat to meat and allow 15 minutes per lb cooking time for rare meat and 25 minutes for well done. Carve in thick slices - spoon over pan juices.
Saute chopped mushrooms in extra butter. Melt butter, remove from heat, stir in flour. Add milk and cream, return to heat and cook slowly, stirring constantly until boiling. Add juice from cooked mushrooms, lemon juice, salt and pepper. Simmer 10-15 minutes, stir in mushrooms. Cook further 2-3 minutes. Serve at once.
