Roast Trout
Preamble
A simple method of cooking bay trout
Ingredients
6 trout - individual portion size
50 ml olive oil
1 clove of garlic, chopped
10 grams salted capers
30 grams black olives, pitted and chopped
salt, pepper
15 grams parsley, chopped
40 grams breadcrumbs, fresh
Method
Clean and gut the trout. Dry well
Set oven at 200 degrees C (390 degrees F)
Place trout in a baking dish and sprinkle with oil, chopped garlic, capers (which hasve been washed well to get rid of salt); the chopped black olives, salt, pepper, chopped parsley
Cover the lot with a layer of breadcrumbs and moisten with some olive oil
Bake about 20 minutes
Carefully lift out the trout so that each one retains its breadcrumb crust and serve with the cooking juices and a wedge of lemon. Serve on hot plates
