Preamble
"Satsivi - Georgia"
Ingredients
1 cup shelled Walnuts
1 large clove Garlic or to taste
Salt to taste
1/4 cup Wine Vinegar
1/2 cup Water or Chicken Broth
1/4 cup finely chopped Onion (optional)
3 tablespoons finely chopped fresh Coriander Leaves or
1 tablespoon Ground Coriander
Cayenne Pepper to taste
Method
Pound the walnuts to a paste with the garlic and salt. Stir in the vinegar and water until well blended. Add the onion, coriander, and cayenne and mix thoroughly. If necessary a little more water may be added. Taste for seasoning. This is an excellent sauce for vegetables and salads.
Note:
Fresh mint leaves or parsley may be substituted for the coriander. Fresh pomegranate juice is sometimes used instead of wine vinegar and water.
