Ingredients
4 large cloves of Garlic
1 Egg Yolk
1 cup Oil
Method
Pound garlic in a mortar with egg yoik. Add 1 cup of oil slowly beating constantly. This is obviously quicker and easier if done in a blender.
Remarks
Good with boiled cod; snails cooked in salt, fennel, onions with cloves, carrots, beans, artichokes, potatoes, hard boiled eggs; squid boiled with herbs.
Arrange on a large dish and serve with aioli.
