Ingredients
3 oz Flour
3 oz matured Cheese grated
2 oz Butter
1 Egg Yolk
Little Salt
Little Cayenne Pepper
Squeeze Lemon Juice
Method
Sieve flour, salt and cayenne. Rub in butter finely, add cheese. Pour in egg yolk and lemon juice to make a stiff dough. Add little water if necessary. Roll thinly.
