Hard Sauce

Ingredients
3 oz Butter
1 cup icing Sugar
1 tablespoon Brandy or more to taste
1 Egg white
Method
ream butter until soft. Sift icing sugar, add to butter and beat until white and light. Mix in almonds if used and work brandy into mixture. Fold in stiffly beaten egg-white. Chill until ready to serve.
You can substitute 1 cup of icing sugar for 3/4 cup of icing sugar and 1/4 cup ground almonds.
